Ancestral Method
The Ancestral Method is a very old method of producing sparkling wines that has lately gain back popularity. Unlike traditional and transfer method, it involves a single fermentation. The juice which is fermenting, is bottled so capturing the carbon dioxide (CO2/ the bubbles), in the bottle from this point. The wines may or may not be disgorged. That is why the not disgorged can be cloudy and have some sediment. Mostly sold youthfull.
Wines made by this method are also called 'Pétillant Naturel' or 'Pet Nat'.
They are typically dry to off-dry, depending on the fermentation and low to medium alcohol levels and can vary in pressure.
Appellation d'Origine Contròlée (AC) & Appellation d'Origine Protégée AOP
This is part of the wine laws of France.
International indication is PDO Wines. In France is this nowadays called AOP (Appellation d'Origine Protégée). It was traditionally, and still used, the AC or AOC (Appellation d'Origine Contrôlée. It is common for one plot of land to be covered by both a generic and a more prestigious appellation. The wine producer must register their intention to produce wine under a particular appellation, a decision that can be influenced by the quality of the vintage.
What is an Appellation?
An Appellation is a legally defined and protected geographical indication primarily used to identify where the grapes for a wine were grown. Restrictions other than geographical boundaries, such as what grapes may be grown, maximum grape yields, alcohol level, and other quality factors may also apply before an appellation name may legally appear on a wine bottle label. The rules that govern appellations are dependent on the country in which the wine was produced.
And its not only used for grapes also for other types of food.
