From A to Z —> F

Filtration

A process that physically removes particles from a wine as it is passed through a filter. Wines can be filtered after fermentation and during maturing to remove the gross and fine lees. There are two ways.

Depth filtration

The filters used are made from a thick layer of material. As the wine passes through the filter the solid parts become trapped inside this material. These filters are able to handle very cloudy wines.

Surface filtration

The filters used to resemble very fine sieves. The solid particles are trapped on the surface of the filter as the wine flows trough it. The filters are very expensive and extremely easily, so are generally for wines that have already been passed through a depth filter.

Finish

What can the word finish mean in wine vocabulary? Finish is the collection of sensations after you have swallowed the wine. It means how long the sensation linger. And is an important indicator of quality. Here your final evaluation, quality essecement and final conclusion are made. Based up on quality level, balance, intensity, lenght, and complexity.

Fortification page -185-192

Fortification is used for the group what is called PSV (Port, Sherry, and Vermouth). Simply said is at an certain level during the fermentation, a natural alcohol spirit with a percentage of 95% abv will be added to the fermenting half wine. This kills the yeast whereby the alcohol increases and the sugars remain in the wine. Maturation makes it to it's final product.
The following week we continue with the letter - F.
